Ripassa Zenato Valpolicella Doc Superiore and Centrale

Once again we hit up our favorite restaurant- this time with fellow New Yorkers, and Bloggers- Terrence and Ken (Mondosapore) Enjoying a refreshing 'spritz,' or a cocktail made from Aperol, prosecco and seltzer- a local treat, we decided on what to eat. Ordering of course our favorite tartar, the boys decided that raw meat wasnt for them and went with two other delightful appetizers; a mini tort with zucchini and bacon for one and a frittata with white asparagus and egg for the other. With these, we drank as we did last time, the Magara.
For the second course we opened another fantastic bottle, this time from a region closer to us- Ripassa Valpolicella Doc Superiore della'Azienda Vitivinicola Zenato. What makes this wine so special, is that the must 'repasses' a fermentation- therefor it has two fermentations. Pretty much an Amarone is made from dried grapes, like any other wine. With the leftover must, regular Valpolicella wine is added and then referments. What comes out of this process is a heavier, higher in alcohol, fruitier, more tannic wine, pretty much a stronger version on the non- ripassa, very similar to the Amarone. It has an deep red color with streaks of granate, and has wonderfully intense, clearly distinguishable aromas of dark fruits, violas, cinnamon, balsamic, leather, chocolate and wood, obviously because it aged in oak. A well- rounded, rich, fruity and velvety rush when drunk, its persistance carries out all the smells sniffed before. And what goes better with a structured, tannic wine? Well, a steak of course! Two different kinds of Florentinas we ordered- one from Poland which was a younger cow, which was soft, sweet and tender; and the other from Austria, and adult animal which when cooked was more similar to most filets that we have, meatier, tougher but still like butter!

Ieri sera io e mia moglie siamo tornati alla Trattoria Alla Centrale a Scorzè, ma questa volta ci abbiamo portato anche due nuovi amici da New York City Terence e Ken. Conosciuti attraverso Giampiero Nadali di Aristide siamo entrati subito in sintonia, infatti anche loro sono deliziati da Bacco il dio del vino scrivono sul loro blog Mondosapore sulle loro esperienze girando in lungo e in largo l'Italia.
Abbiamo aperto due bottiglie di cui una n abbiamo gia parlato nel post....., l'altra invece più interesante e preziosa, anche a livello di spesa, era il Ripassa Valpolicella Doc Superiore della'Azienda Vitivinicola Zenato.La caratteristica del ripasso e di rifermentare il Valpolicella della vendemmia di ottobre nelle bucce dapprima usate dal fratello maggiore col nome illustre Amarone. Un vino dal colore rubino intenso con leggeri riflessi granati, con una buona consistenza e intensità nei profumi che spaziano dal floreale, alla confettura di more e prugne per arrivare alla cannella con inizi di etereo; in bocca introduce la sua potenza gustativa in un modo intenso e vellutato con un persistenza ammirevole.
L'abbiamo abbinato a delle carni importanti come la rinomata "fiorentina" e ad una specialità dl posto carne prussiana.
